As I've mentioned before, these recipes are things I've made when I'm hungry and realised there is no food. Before I start, I must stress that every cupboard should be stocked with a tin of chopped tomatoes. Mine are always Tesco Value ones, as I've never noticed a difference between cheap peeled and chopped tomatoes and expensive peeled and chopped tomatoes. Anyway, back to the point of this. Canned tomatoes are great because they don't go out of date and they retain taste in the winter, when normal tomatoes tend to taste slightly watery.
I use:
- 400g of chopped tomatoes.
- A tablespoon or 2 of brown sugar. (Optional, add to taste.)
- Vegetable oil.
- 1/2 Finely chopped onion (I use red, but I don't see why white wouldn't work.)
- Grated or crushed garlic.
- 1 or 2 teaspoons of sea salt (I suppose table salt would work, add to taste.)
- Cayenne pepper (again, add to taste.)
- Herbs (to taste.)
We always have some dry herbs and spices, as well as sea salt and pepper in our cupboard, purely because they add a little taste to everything.
